Cod cake on a platter for the whole family

It’s the perfect option to bring for Good Friday and Easter lunch, as it includes cod, an essential ingredient of the season. So how about learning? Check out the complete preparation method below and reproduce it at home:

Cod cake on a platter

Time: 45 minutes (+ 24 hours soaking)

Performance: 5 servings

Difficulty: easy

Ingredients:

  • 500 g of cod flakes
  • 2 cups milk (tea)
  • 1 bay leaf
  • 500 g peeled potatoes, diced
  • 4 tablespoons of olive oil
  • 1 small onion diced
  • Salt and black pepper to taste
  • 2 tablespoons chopped parsley
  • 2 eggs
  • 4 tablespoons grated parmesan
  • 4 tablespoons of breadcrumbs

Modpreparation:

  1. Leave the cod to soak in water for 24 hours in the refrigerator, changing the water 3 times.
  2. Drain and place in a pan.
  3. Add the milk, bay leaves and cook over low heat for 10 minutes.
  4. Remove the cod, let it cool and chop it.
  5. In the meantime, pour the potatoes into the cooking milk and place over a medium heat and cook for 15 minutes or until soft.
  6. Drain, set the milk aside and use the juicer while it is still hot.
  7. Heat a pan with olive oil over medium heat and sauté the onion for 2 minutes.
  8. Add the cod, potatoes, salt, pepper and then pour in the reserved milk, little at a time, mixing until you obtain a consistent puree.
  9. Remove from the heat and mix in the parsley and eggs, one by one, mixing well after each addition.
  10. Pour into a baking dish and sprinkle with cheese and flour.
  11. Place in a high preheated oven for 10 minutes to brown.
  12. Remove and serve immediately.
