A full 39 hours, with everything you need: brine, long cooking at a controlled temperature and a short time in the oven to caramelize. Thus was born the version of Foda à Moda de Monção by Bacalhau Vinho & Cia., a new proposal for Easter Sunday.
The dish, considered one of the seven gastronomic wonders of Portugal, is traditional in the municipality of Monção. It is a lamb roasted in a wood oven over a terracotta bowl on which to drip the rice, which is served with the roast.
“Since it is not possible to roast a whole lamb here in the restaurant, we have made an adaptation,” says chef Caique Pallas. The style was the cut chosen to shine in the maison’s version. The pieces are left in brine, with coarse salt, paprika and bay leaves, for three hours and then undergo vacuum cooking: this phase lasts 36 hours at 63ºC.
When serving, the chef finishes the baked lamb to caramelize the outside of the meat, which arrives at the table still pink in the center. The arroz caldaso, traditionally served as a garnish, is prepared at home with Bomba, in addition to lamb broth, and enriched with chopped meat.
The dish, which serves two to three people, costs R$ 280. It can be ordered at the restaurant or via delivery (in this case it is better to order in advance).
What name is it?
For starters, the term “fuck” in Portugal doesn’t have the same connotation that it does here in Brazil. There, the word is used to refer to very good things, for example, and has no sexual meaning.
Different stories explain the emergence of the name of the dish. What is described on the website of the Municipality of Monção is that the Feira da Foda, where the traditional lamb was served, was named after the cattle breeders, who gave salt to their herd so that the animals could drink plenty of water and look fatter.
Inexperienced buyers, who were not aware of this trick, when they noticed the bad deal, exclaimed: “what a great deal!”.
The term has become so popular that it has also become the nickname for lamb Monção, a great choice for Easter.
